What other passenger carriers are doing: Global dishes, flying high

“This is where we do the dishes,” said Robert Paulus, senior supply chain manager for Emirates Flight Catering.

At the nerve center of the Emirates Flight Catering Facility, multiple monstrous dishwashers work 24 hours a day to get the dishes done — all 3.2 million or so of them. Once squeaky clean, it’s a matter of minutes before they’re loaded on to an overhead conveyor belt — stretching more than a mile and a half long — to make the journey back to one of Emirates many kitchens. On any given day, the Dubai facility prepares more than 180,000 meals and sends them flying to more than 140 destinations and 80 countries around the world.
